So you know those Brooklyn Brine Co. pickles that are sold all over the place and are totally delicious? Well, it turns out that the young, 100 percent Brooklyn-based company moved its factory from Greenpoint to Gowanus last spring and, in the process, added a welcoming storefront to the mix. I stumbled in a few weeks ago, got a grand tour of the operations from the very friendly founder, and walked away with a jar of pickled Meyer lemons that I plan to incorporate in just about everything I cook for the next several weeks. I also learned that the new space hosts Saturday pickling classes, where you can learn how to make traditional garlic and dill pickles. You get free reign to experiment with a variety of spices, bourbon, rye, and IPA to create your own weird pickle recipes. Each class is two hours and costs $40, and you will walk away with three jars of pickles and the confidence to create many more batches of salty, crunchy super snacks at home in the future.
