Hydroponic Pesto from Boswyck Farms

We profiled Boswyck Farms, the hydroponic farm on top of Bushwick Starr today. Here’s their favorite pesto recipe, which can be made using basil, spinach, arugula or a blend of all three.

Boswyck Farms Hydroponic Pesto

ingredients:

2 cups greens, loosely packed: basil or blend of spinach and arugula

1 to 2 peeled cloves of fresh garlic

1/2 cup pine nuts or walnuts

1/2 cup parmesan cheese

1 tablespoon butter, softened (optional)

1/3 cup olive oil

1/3 cup water

Salt to taste (at least 1 teaspoon)

1. In a blender or food processor, blend greens, garlic, olive oil, water, and salt. When smoothly combined, add nuts. Blend again until smooth.

2. Finely grate parmesan cheese. In a separate bowl, use the back of a wooden spoon to blend cheese and butter until smooth.

3. Combine green mixture and cheese mixture.

4. Taste for salt. Add more if necessary.
