The newest chapter in New York’s continuing obsession with all things boozy is the draft cocktail. They’re pre-mixed and then poured, either straight up or over ice, from a tap system, quickly delivering a fancy cocktail that has also had ample time for its flavors to mingle. Yours Sincerely, a booze-forward venue that opened next door to its sister bar/restaurant Dear Bushwick on New Year’s Eve, has cornered the market on this prep-intensive style of bartending, and while the conceit may seem a wee bit precious, the prices are definitely not.
Your Sincerely offers a mind-boggling array of high-octane cocktails on tap–close to two dozen–along with cocktail shots and build-your-own concoctions, all for $8 or less. The Morgantown speakeasy isn’t the first Brooklyn bar to feature draft cocktails, you can find them at Loosie Rouge, Donna and King’s County Imperial, among others, but it is the first to showcase pre-mixed poison as its main draw. Though a ton of work goes on behind the scenes to make this happen, draft cocktails mean a short turnaround time between order and first sip. But it can also mean a hangover if you’re not careful.
The cocktail menu features a mix of classic cocktails delivered via nitrogen, so they remain uncarbonated, with punchily updated names (an Old Fashioned is known as a Swipe Right here, which made us wonder what Don Draper would have made of Tinder), and fruitier carbonated drinks like the Malibu Fizz and the Ruby Slippers–a Tom Collins with bolstered by hibiscus agave syrup. The carbonated cocktails are poured over ice, but several of the nitrogen cocktails are served straight up in Yours Sincerely’s signature beaker. This might give the illusion of being a small pour, but these cocktails pack a serious punch–there’s even a warning on the menu. We’re particularly fond of the Swipe Right, Big Worm (aka Sazerac), and the Lab Rat (aka Daiquiri), but suggest you try them all–just not all at once. There’s a rotating selection of beer and wine for less adventurous drinkers.
Co-owners Darren Grenia and Julian Mohammed (of Dear Bushwick) have billed Yours Sincerely as a “cocktail laboratory,” and it should be noted, this is not the place to go if you’re very, very particular about how your drink is made–Yours Sincerely is all about their vision, not about your vodka martini with precisely two drops of olive juice, shaken exactly 12 times. The design evokes an apothecary with a gently macabre twist. The space is narrow, but high ceilings and a compact bar keep it from feeling cramped and leave plenty of room for table seating (Yours Sincerely will soon begin serving bar snacks from its shared kitchen with Dear Bushwick). The dim lighting and vintage Victorian atmosphere make it easy to forget what time, and eventually, what day it is.
