Crown Finish Caves is a Brooklyn-grown cheese-aging operation and dairy plant that, as Meredith Craig de Pietro reported, is notoriously hard to check out. The Crown Heights facility doesn’t offer public tours because of food safety concerns, and tickets for its bi-monthly music series that brings performers to the caves tend to sell out in about a minute. Tickets for its March show are already sold out, but if you didn’t make the cut (or are looking for a chiller way to check out CFC’s wares), I have some solutions.
Of course, you could swing by any of the retail locations that sell the company’s cheeses, including Stinky Bklyn and Mekelburg’s. But in my professional opinion, you should probably make a night of it and pop by Grimm Artisanal Ales on Thursday at 6:30 pm for the NYC Beer Week event they’re hosting with CFC. For $60, you can enjoy four cheeses that were washed in the East Williamsburg brewery’s beers specifically for the evening, along with perfectly paired brew selections. It’s sure to leave you cheesin’ — a joke that will be much funnier after you’ve downed a few cold ones.
