The Consorzio del Prosciutto di Parma is celebrating its 50th anniversary at the Wythe Hotel with Prosciutto di Parma Palooza on Sept. 26. Believe it or not, this is the first-ever, large prosciutto bash to take place in New York. Unlike Lollapalooza, there won’t be three stages of over-hyped bands and $5 bottles of water for sale. Underground Eats has gathered 10 of the best chefs in town, including Danny Bowien (Mission Chinese Food), Ryan Hardy (Charlie Bird) and Sean Rembold (Reynard), to create unique dishes all using one key ingredient–prosciutto! Sip on Italian red wines or specialty cocktails and learn about the aging process and carving techniques for this particular pork product. For some additional fun, get a Prosciutto di Parma tattoo and receive a free leg of ham (seriously), test your palate by trying various slices of prosciutto and vote for your favorite dish to decide who will be crowned Prince/Princess of Prosciutto di Parma.
